Robby and Cyrus walk us through a low-fat, plant-based recipe for mangos & salads.

Ingredients:  
Fruit Salad: 
2-3 medium stalks romaine lettuce 
1 cup chopped arugula  
2 small ripe papayas, peeled and cut into cubes or small bites 
2 small ripe mangos, peeled and cut into cubes or small bites 
1 cup ripe strawberries, destemmed and halved 
2 small heirloom tomatoes, destemmed and sliced 
1 cup blueberries 

Sweet Ancho Chile Sauce:  
½ cup celery, chopped 
1 cup cherry tomatoes, halved 
4 dates, pitted 
2 ancho chile peppers, dried  
2 cloves garlic 
½ lemon, juiced 

Materials:  
-Salad bowl 
-Mini food processor 
-Chef’s knives 
-Cutting board 
-Serving bowls

Instructions:
1. Chop your romaine lettuce and add to your salad bowl. 
2. Chop your arugula and add to your salad bowl.  
3. Add your papaya, mango, strawberries, heirlooms, and blueberries to your salad.  
4. Pour your celery into the food processor, followed by your tomatoes, your pitted dates, your dried ancho chile peppers, your garlic, and your lemon juice. 
5. Pulse in food processor until smooth. Don’t be afraid to mix manually with a spoon to aid the process!  
6. Put sauce in separate bowl once done. Use as dressing or dip.  
7. Serve and enjoy!
